Recipe: Gingersnaps

I made these cookies for my dad's birthday, which is the day after tomorrow. Although I'm not a big fan of them, they are actually pretty good when they are fresh and warm. And I must say that they look quite pretty, too.

Best Ever Gingersnaps
3/4 cups shortening
2 eggs
2 cups sugar
1/2 cup molasses
2 tablespoons ginger
4 cups flour
2 teaspoons baking soda
2 tablespoons vinegar
1 teaspoon salt

Beat shortening, eggs, sugar, molasses and vinegar. Add dry ingredients and mix until combined.Form balls. Place on cookie sheet and flatten with glass bottom dipped in sugar. Bake at 400 degrees until brown, about 10-12 minutes.

Makes about 5 dozen small cookies.
