Crepes
1 1/2 c. flour
1 tablespoon sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
2 c. milk
2 eggs
1/2 teaspoon vanilla extract
2 tablespoons butter
Measure dry ingredients. Slowly beat in liquids until all are added ( a few lumps are okay).
Heat frying pan; once hot add a bit of butter, to coat the bottom of the pan. Pour about 1/4 cup of mixture into the pan and twirl until a thin layer. Watch it until it is golden brown on bottom side, then flip. Repeat, do NOT add more butter between each crepe.
Fill with toppings of your choice. My family enjoys filling them with raspberries and sprinkled with powdered sugar (as shown above).
